March Recipe Exchange: International Recipes

Thia soup

Chicken thighs or drumsticks (they have the most flavor) put in a pot cover with water and cook. When done, remove the meat from the bones, saving the broth.
Add to broth:
zucchini, unpeeled, chunks
yellow squash, unpeeled,chunks
cucumber, unpeeled, chucks
onion, diced
fresh tomatoes, diced (you can remove seeds if desired)
carrots, diced

Cook in broth until al-dente, taste the broth, may need to add some chicken bouillon. Add salt, pepper to taste. Optional: cilantro and green onions

Quantities I can't give you, each family is different. Just eye ball the amount of broth you have and what your family will eat. Please leave the peels on the veg's they add a lot of flavor! The cucumber sounded very weird at first, buy man does it taste good!

Another great recipe that a Thia sister in our San Diego ward taught my boys. She said it is cheap, easy and delicious for a missionary! How nice of her to train my boys at such an early age! They are excited for their missions knowing something easy to make. If any of you want to come to my house for a demo on how to make it, let me know.
