Stone Soup Enrichment Night Recipes

Rocky Road Cake- Heather Merrill

1 C. chopped dates (usually found next to the raisins at the grocery store)
1 ½ C. boiling water
1 ½ tsp. baking soda

* Mix and set aside

¾ C. butter or shortening
1 C. sugar
2 eggs
1 ¾ C. sifted flour (or GF flour)
¾ tsp. baking soda-( yes, it calls for soda twice this is not a typo…)
½ tsp. salt

Add to date mixture and combine well. (it will be runny if using regular flour)

Before baking, add toppings:

Sprinkle Each Topping:

1/3 C. brown sugar
¾ C. chopped pecans
1 small pkg chocolate chips (generous 1 C.)

Bake at 350 degrees for 35-40 minutes in a 9X13 inch pan.

Chicken Vegetable Alfredo Soup
I used to sell Pampered Chef and this is one of my favorite recipes
  • 1 cup chopped broccoli
  • 1/2 cup chopped carrots
  • 1/2 cup chopped onions
  • 1/2 red bell pepper, diced
  • 1 garlic clove, minced
  • 14 1/2 ounces chicken broth
  • 2 cups cooked chicken, diced
  • 1 tablespoon fresh basil, snipped
  • 16 ounces alfredo sauce
  • grated fresh parmesan cheese (optional)

DIRECTIONS

Place broccoli, carrots, onion, bell pepper and garlic in saucepan. Add broth; bring to a boil. Cover; reduce heat and simmer 5 minutes or until veggies are crisp-tender.

Add chicken and Alfredo sauce to broth; simmer 5 minutes or until heated through. Remove from heat; stir in basil. Ladle into bowls and sprinkle with Parmesan cheese, if desired.

White Bean Soup with Ham

Serves 8
1 lb smoked ham hock - I just used the left over, meaty bone from Easter.
3 cups dried small white beans, rinsed and picked over
2 medium onions,quartered
2 bay leaves
garlic salt to taste - or some kind of garlic
carrots and celery

Put smoked ham hock, beans, onions, garlic and bay leaves and liquid together in large saucepan. Bring to a boil, turn down low and simmer until beans are soft and ham falls off bone. If desired remove bone and chop up meat into soup. If you want, then add carrots and celery and cook until the vegetables are the right texture. If you want to use a crock pot, that is doable, it just takes more time.

Creamy Broccoli Cheese Soup

1 ½ c. chicken broth

1 tbsp. butter

1 tbsp. flour

1/8 tsp salt

Dash pepper

1c. heavy cream

3 c. cooked broccoli

1 tsp. thyme or Italian seasoning

8 oz. American cheese slices

Blend or food process cooked broccoli with ¾ c. chicken broth until smooth. Set aside.

In med. Sauce pan melt butter. Stir in flour and seasonings. Add cream all at once. Cook and stir until slightly thickened and bubbly. Cook 1 min. more. Stir in broccoli. Cook until heated through. Stir in cheese a little at a time. Season with additional salt and pepper to taste. If you want a more hardy soup, you can add cooked chicken, steamed broccoli, and sautéed mushrooms.

Avacado Caesar Salad

No recipe really, just add avocados to ceaser salad. haha. The avocados are what made that salad good!! Don't you just love them? So if you must have a recipe here it is: romaine lettuce, shredded parmesan cheese, Kens creamy caesar salad dressing (from a bottle) and two avocados. That's the way I do things...nice n easy.
